摘要
伏安电子舌是由一组贵金属电极组成,通过在工作电极和参比电极上施加外电压,来测量辅助电极和工作电极之间的电流,再配以模式识别方法来识别不同的样本。该种电子舌具有操作简单、适应性强、敏感度高、信息量大等优点。本文介绍了伏安电子舌的原理及其在饮品、微生物、环境和工业等领域的应用状况,并对其发展方向进行了展望。
Voltammetric electronic tongue is composed of a group of noble metal electrodes. The outside voltage is applied to the working electrode and reference electrode, and the current between the working electrode and counter electrode is measured. Finally, pattern recognition methods are used to identify different samples. The kind of electronic tongue has advantages such as simple, adaptable, highly sensitive, containing large amount of information etc. This paper describes the principle of voltammetric electronic tongue, its application in beverages, microbe, environment, industrial fields and so on, and the future direction to develop.
