摘要
本文从四川泡菜与川菜文化的角度出发,论述了四川人的泡菜情结;通过整理文献,得到泡菜在川菜中应用的数据,分析泡菜在川菜中的地位和作用;总结了泡菜的吃法及在川菜中的应用情况;并提出了泡菜企业在未来发展中应注意解决的问题。
This thesis discusses sichuaneses' complex of pickled vegetables, which based on the view angle of Sichuan pickled vegetables and the culture of Sichuan cuisine. The data of pickled vegetables applied in Sichuan cuisine were collected through literature review. And the roles and functions of pickled vegetables were analyzed in this thesis. We conclude the way to eat pickled vegetables and its application in Sichuan cuisine. We bring out some problems which should be tackled down in the developing process of pickled vegetables business.
