摘要
通过查阅近20年中、外文文献,归纳总结了目前苦味抑制剂的分类、原理及应用,并重点综述了几种重要的苦味抑制剂的特点及应用。根据作用原理的不同,苦味抑制剂可分为天然苦味抑制剂、苦味阻滞剂、味蕾麻痹剂、味觉增强剂、降温剂和加温剂等。苦味抑制剂在药物掩味方面将发挥越来越重要的作用,其中天然苦味抑制剂是未来苦味掩味研究的重点。伴随着苦味抑制剂的开发应用,实现"良药不再苦口"将指日可待。
Summarized the principles, classification and application of bitterness suppressants by consulting the chinese and foreign literatures in recent two decades, and summarized the characteristics and applications of several important bitterness suppressants. According to the different principles, bitterness suppressants can be divided into natural bitterness suppressants, bitter blockers, taste buds paralytic agent, taste enhancer agent, cooling agent and warming agent and etc. bitterness suppressants will play an increasingly important role in the drug taste masking. Natural bitterness suppressants will be the focus of the bitter taste masking in the future, accompanied by the development and application of the bitterness suppressants, realize medicine is no longer bitter just around the corner.
