摘要 选用棕榈液油作基料,通过添加Tween80、单甘酯、酰化磷脂、黄原胶等乳化剂,研究适用于焙烤专用脱模剂的生产技术及配方。通过单因素及正交实验确定O/W型焙烤专用脱模剂最佳制备条件为:酰化磷脂添加量3%,油水比例4∶6,乳化时间1 min,Tween80-单甘酯复配添加量3%,黄原胶添加量0.3%,乳化温度70℃,剪切速率10 000 r/min。在此工艺条件下,得到O/W型焙烤专用脱模剂的乳化分层指数为0.69%。 The production technology and formula of special oils for baking release agent were developed by using palm oil stabilized with various additives including Tween80, monoglyceride, acylated phospho lipid and xanthan gum. The optimal preparation conditions for O/W baking release agent were determined by single factor experiment and orthogonal experiment as follows:acylated phospholipid dosage 3%, ratio of oil to water 4: 6, emulsion time 1 min ,Tween80 - monoglyceride dosage 3% ,xanthan gum dosage 0.3%, emulsion temperature 70 ℃, stirring rate 10 000 r/rain. Under these conditions, the creaming index of the special oils for O/W baking release agent was O. 69%.
