摘要
多环芳烃是人们熟知的持久性有机污染物之一,其中苯并芘是第一个被发现的环境化学致癌物,而且致癌性很强,故常以苯并芘作为多环芳烃的代表。对食用油中苯并芘的污染来源以及脱除方法进行了详细阐述,并对食用油中苯并芘的研究和技术发展进行了展望。
Polycyclic aromatic hydrocarbons are known as persistent organic pollutants. Benzo (a)pyrene is the first environmental chemical carcinogens found with strong carcinogenicity, so benzo(a) pyrene is u sually seen as the representative of polycyclic aromatic hydrocarbons. The source and removal methods of benzo (a)pyrene in the edible oils were reviewed. The research prospect and technological development of benzo(a) pyrene in edible oils were also analyzed.
