摘要
采用国际或国家标准分析方法 ,对 1999年山西省种植的或参加区试的 31个小麦品种 (系 )进行了品质测试 ,各性状的平均值为 :千粒重 36 0g ,容重 76 9 5g/L ,角质率 58 7% ,出粉率 6 1 0 % ,蛋白质含量 13 7% ,湿面筋 4 4 3% ,干面筋 14 5% ,沉降值 36 6ml。参照小麦品质分类标准 ,目前山西省种植的小麦品种的容重、出粉率、沉降值中等 ,蛋白质和面筋含量较高 ,但面筋质量较差 ,大多小麦品种属于中力小麦 ,个别品种达到强力小麦标准 ,无弱力小麦品种。
The quality of 31 wheat varieties and lines grown or tested in the regional trials in Shanxi were tested according to international or national standard. The average values of these varieties were 36.0g for 1 000 kernel weight, 769.5g/L for unit weight, 58.7% for cutin rate, 61.0% for flour yield, 13.7% for protein content, 44.3% for wet gluten content, 14.5% for dry gluten content and 36.6ml for sedimentation value. According to the standard of wheat quality classification, the unit weight, flour yield and sedimentation value of the varieties grown in Shanxi were of middle level. Their protein and gluten content were relatively high. The quality of gluten was relatively low; most varieties were of middle gluten content, some reached the standard of high gluten wheat, no weak gluten varieties existed.
