摘要
吸水率是小麦和小麦粉品质的一项重要指标。通过对小麦面筋吸水率的测定过程进行研究(测定方法按GB/T5506.2-2008、GB/T5506.4-2008执行),分析测量结果不确定度的来源并进行评估,提出应用该方法不确定度的评定结果。
Water absorption of wheat gluten is one of the important quality parameters of wheat and wheat flour. The uncertainty reasons for determination results of water absorption of wheat gluten were analyzed and e- valuated through the research on test process for water absorption of wheat gluten (According to GB/ T5506.2--2008, GB/T5506.4--2008). The evaluation for the uncertainty by using the method above was put forward.
