摘要
研究合格食用油中掺入20%、40%、60%、80%、100%的地沟油后,其理化特性的变化。研究表明,掺入不同比例的地沟油,会导致其酸价、电导率增大,折光率减小。酸价、电导率均可作为是否掺入地沟油的依据;但折光率、过氧化值难以作为判断依据。
Study of physicochemical property changes of qualified edible oil in the case of adding different proportions of hogwash oil.Research shows that by adding different proportions of hogwash oil,the acid value and conductivity will increase while the refractive index will decrease.Acid value and conductivity may be used as a factor as to the addition of hogwash oil while the index of refraction and peroxide value may not be used as a basis for this judgment.
