摘要
综述了国内外物理保鲜技术在水产品贮藏加工中的应用进展,主要介绍水产品的腐败机理以及低温保鲜、辐照保鲜、超高压保鲜、气调保鲜、干燥保鲜等技术的原理及在水产品中的应用.简要展望了水产品物理保鲜技术的未来发展趋势,为进一步研究提供借鉴.
This paper summarized the application progress of physical preservation in storage and processing aquatic products at home and abroad,and mainly introduced the spoilage mechanism of aquatic products and the application of technologies in preservation of aquatic products,such as low-temperature preservation,irradiation preservation,ultrahigh pressure preservation technology,controlled atmosphere packaging,and vacuum freeze drying.We also briefly prospected the future development trend of aquatic products physical preservation technology to provide some suggestions for further studies.
