摘要
通过对黑加仑色素可见光谱变化的分析 ,研究了Na+、Mg2 +、Ca2 +、Fe3+、Al3+等金属离子对黑加仑色素稳定性的影响。结果表明 ,Na+、Ca2 +可使黑加仑色素吸光度略有提高 ,有稳定作用 ;Cu2 +可使黑加仑色素吸光度略有降低 ,可能是黑加仑色素不稳定因素之一 ;Al3+。
The effects of metal ions such as Na + , Mg 2+ , Ca 2+ , Zn 2+ , Cu 2+ , Fe 3+ and Al 3+ on the stability of blackcurrant pigment were studied by spectrum anaiysis of the pigment Na + and Mg 2+ hava no obvious effects on the pigment and Zn 2+ and Ca 2+ can enhance the colour of the pigment,while Cu 2+ can reduce the colour, and Al 3+ and Fe 3+ can change the colour.
