餐条、大眼华鳊含肉率和肌肉营养成分分析 被引量:12

摘要 通过测定餐条和大眼华鳊的含肉率、一般营养成分、脂肪酸及氨基酸,对其营养品质进行了评价.结果表明,餐条与大眼华鳊的含肉率均稍低于鲤鱼、鲫鱼,肌肉中粗脂肪含量与同属溪流性的光倒刺纪相近,多不饱和脂肪酸占肌肉脂肪酸分别为34.36%和36.69%,含有谷氨酸等人体必需7种氨基酸.餐条和大眼华鳊具有较高的营养价值,是开发利用前景广阔的优良养殖品种。 The authors in this paper examined the fresh content, general nutritional component, fatty acid and amino acid in the muscles of hemiculter leucisculus basilewsky and sinibrama macrops gunther. Besides, the researchers made evaluation on their nutritional quality. The results prove that the fresh content rate of hemiculter leucisculus basilewsky and sinibrama macrops gunther is lower than that of cyprinus carpio and carassius areuatus. However, the crude fat composition in the muscles of hemiculter leucisculus basilewsky and sinibrama macrops gunther is similar to that of spinibarbus hollandi which also lives in brook. The proportion of total polyunsaturated fatty acid in the muscle fatty acid of hemiculter leucisculus basilewsky and sinibrama macrops gunther is 34.36% and 36.69% respectively, of which there are 7 kinds of amino acid such as glutamate needed in human body. Hemiculter leucisculus basilewsky and sinibrama macrops gunther enjoy high nutritional value, thus they could be raised by man for business market with a bright future
