摘要 为了确定荔枝真空冷冻干燥的工艺参数,采用电阻法测量荔枝真空冷冻干燥的物料共晶点,并应用响应面法,以冻干品生产能耗为指标进行评定考察冻干效果,优化荔枝真空冷冻干燥工艺。结果表明:荔枝真空冷冻干燥物料的共晶点温度为-23℃,干燥室压力为60Pa、物料厚度为4mm、加热温度为35℃,应用该优化技术工艺可最大限度地降低生产能耗。 In order to confirm the optimum technological parameter in vacuum freeze-drying of litchi, experiments were conducted with litchi. The eutectic point of litchi was ying. The technologies of the vacuum freeze-drying determined by electrical resistance method in the vacuum freeze-dr- of litchi were optimized by Response Surface Methodology, and ac- cording to evaluating the effects of the energy consumption indexes in the process. The resuhs showed that the eutectic point of litchi pulp materials were -23℃ in the vacuum freeze-drying. The optimized combination of factors is pressure of drying house 60pa, material thickness 4mm, heating temperature 35℃. With the application of the technology to the optimization of the maximize production energy consumption.
