摘要
以绞股蓝和甘草干品为主要原料,采用正交试验和感官评定方法对绞股蓝甘草复合保健饮料的配方进行研究。结果表明,最佳配方为:绞股蓝浸提液15 mL.L-1,甘草浸提液70 mL.L-1,蔗糖70 g.L-1,柠檬酸0.2 g.L-1,蜂蜜4 mL.L-1。应用该配方制成的绞股蓝甘草复合保健饮料酸甜适口,饮后甜味持久,具有绞股蓝和甘草的协调香味及营养保健功效,是一种值得推向市场的新型饮品。
Take dried Gynostemma pentaphyllum and liquorice as the main raw materials, research on the formula of the function compound drink was studied through orthogonat test and sensory evaluation method. The result showed that, the optimum formula were as follows, Gynostemma pentaphyllum extracted liquid was 15 mL·L-1, liquorice extracted liquid was 70 mL·L-1,the sugar was 70 g·L-1, the citric acid was 0.2 g·L-1, honey was 4 mL·L-1. The gynostemma liquorice function compound drink made by the application of the formula, tasted sweet and sour palatability, with the sweet stay in the mouth lasting after drink, had the coordination scent of gynostemma and liquorice, and nutritional health. It was a new drink which worth to the market.
