摘要 紫苏在我国已经有2000多年的栽培历史。紫苏营养丰富,特别是含有丰富的α-亚麻酸、蛋白质、维生素、胡萝卜紊、抗氧化物歧化酶和多种微量元素。紫苏具有很好的药用功能和食品保健功能。除紫苏全草做药用外,紫苏油、紫苏蛋白粉、紫苏茶、紫苏α-亚麻酸还是良好的健康食材。发展紫苏健康食材,应该从紫苏种植抓起,立足于紫苏产品的综合开发,促进全产业链的形成,提高产品附加值。紫苏在健康食材中的应用日趋广泛,在国内外的市场前景非常广阔。 Perilla frutescens L. has more than two thousand years of cultural history in China. It is nutritious, especially rich in α - linolenic acid, protein, vitamins, arytenoids, anti - superoxide dismutase and various trace elements. Perilla frutescens L. has good medicinal value and nutrition health care function. It can be medicinal, besides that, Perillafrutescens L. oil, Perilla frutescens L. pro- tein powder, Perilla frutescens L. tea and PeriUa frutescens L.α -linolenic acid are good healthy ingredients. To develop PeriUa fru- tescens L. healthy ingredients,we should start from the growing of Perilla frutescens L. , and base on the comprehensive development of Perilla frutescens L. products,promote the formation of the whole industry chain, increase product added value. PeriUa frutescens L. has broad application prospects on healthy ingredients, and the domestic and oversea market prospect of Perillafrutescens L. prod- ucts is very bright.
