摘要 以辣椒及其制品为研究对象,建立HPLC-MS/MS快速测定苏丹红Ⅰ号的测定方法。样品经乙腈溶液提取、稀释定容后,以咖啡因为内标,采用HPLC-MS/MS法进行测定,并对检测条件进行了系统的研究和优化。该分析方法的线性范围为5-1000ng/mL,最低检测限为0.02ng/mL,多次测定的RSD在6.8%以内,回收率在93.2%-113.4%之间,具有良好的准确性和重现性,操作简单,满足食品中苏丹红Ⅰ号的检测需要。 Using Chili and its products as the research object, a method for fast determination of Sudan red I by HPLC-MS/MS was established. Chosen caffeine as internal standard, the samples were determined by HPLC-MS/MS after extracting and diluting by acetonitrile. The examination conditions were further optimized and researched Systematically. Results showed that the linear range was from 5 to 1000ng/mL, the detect limit was 0.02ng/mL, the relative standard deviation (RSD)was less than 6.8% and the recovery was between 93.2% and 113.4%. The proposed method had the advantage of simplicity, accuracy and repeatability, which was adapted for the detection requires of Sudan red I in food.
