摘要
在2、8、12℃的贮藏温度下,对豇豆进行壳聚糖涂膜保鲜研究,通过对豇豆在贮藏期间外部感官品质和内部感官品质的综合评价,得出了壳聚糖保鲜剂的最佳配方,对豇豆生理生化指标的测定,通过正交及交互试验确定了此类豇豆在一定贮藏温度下的最佳壳聚糖保鲜配方,结果表明:2%的壳聚糖,30μg/mg 6-BA和0.3g/kg的脱氢醋酸钠,在8℃的环境下贮藏,能较好的延长豇豆的贮藏周期。
