两株产胆固醇氧化酶细菌对鸡蛋胆固醇的降解作用

摘要 为了对开发低胆固醇的食品提供参考,对从动物粪便样品中分离出的两株胆固醇氧化酶活力较高的假单胞菌和芽孢杆菌,分别对比了其发酵上清液、菌悬液和胞内酶提取液对鸡蛋胆固醇降解的影响。结果表明,两种细菌的发酵上清液具有良好的降解效果,降解率分别达52.1%和49.6%。 In order to provide a reference for the exploitation of low cholesterol food,two bacteria strains that produced high level of cholesterol oxidase(COD) were isolated from animal intestines and identified as Pseudomonas sp and Bacillus sp.The effects of supernatant,thallus and endoenzyme extraction on the degradation of cholesterol in eggs were relatively compared.The results showed that the supernatant of two strains had the good ability to decrease the cholesterol content of eggs with the decomposing rate of 52.1% and 49.6% respectively.
