基于超高压的稻谷亮白曲霉杀菌效应及其萌发特性研究 被引量:7

摘要 以人工表面污染亮白曲霉的稻谷作为试验对象,研究了超高压加工参数(压力、保压时间、预浸泡时间)的杀菌效果及加工后稻谷的萌发特性。结果表明,压力、保压时间、预浸泡时间等参数对稻谷亮白曲霉的杀菌效果均有显著影响。当压力大于300 MPa时,亮白曲霉存活量开始有明显的下降,且保压时间越长亮白曲霉存活量下降幅度越明显。而在超高压处理前对稻谷进行预浸泡也可有效提高超高压的杀菌效果,且预浸泡时间越长提高效果越明显。此外,超高压加工可有效实现稻谷的休眠,在较低压力(100 MPa)下即可使稻谷完全失去萌发能力,而浸泡预处理对于稻谷的萌发能力略有保护作用。 In this paper,the artificially contaminated aspergillus candidus rice was taken as the test object, the starelizing effect of Ultrahigh pressure processing parameters ( pressure, dwell time and pre - soaking time) as well as the germination characteristic after processing were studied. The results indicated that all these parameters affected the starelizing effect obviously, and a obvious reduction of the amount of Aspergillus candidus was observed at a pressure higher than 300 MPa, the longer the dwell time, the greater the degree of decline. However, pre - soaking the rice prior to ultrahigh pressure treatment can also effectively enhance the starelizing effect of ultrahigh pressure. And the longer the time, the greater the degree of increase. Besides, ultrshigh pressure processing can realize the donmancy of the rice, a complete loss of germination ability was at low pressure of 100 MPa and pre - soaking treatment has a protection effect on the germination ability of the rice.
