摘要
目的用毛细管气相色谱与三重串联四极质谱仪建立气相色谱三重串联四级杆质谱仪(GC/MS/MS)检测奶油制品中9种反式脂肪酸含量的方法。方法奶油制品中提取的脂肪经氢氧化钾-甲醇溶液水解、甲酯化后转变为脂肪酸甲酯,用HP-88MS色谱柱分离GC/MS/MS系统分析。结果该方法中的仪器分辨率高,方法的重复性RSD<5%,回收率89.4%~97.7%,最低检出限能够满足要求。结论 GC/MS/MS具有准确的定性、精确的定量功能,为奶油制品中9种反式脂肪酸的检测提供了的方法。
[Objective] To establish the determination method of 9 kinds of trans fatty acids content in dairy products by Gas Chromatography-Mass Spectra-Mass Spectra(GC/MS/MS).[Methods]Fatty acids turned to its methyl esters by hydrolysis and methyl esterification with potassium hydroxide-methanol solution,then injected and analyzed by HP-88MS and GC/MS/MS.[Results] The instrument had high resolution,the RSD of precision was lower than 5%,and recoveries were 89.4%-97.7%,and its minimum detection limit could meet the requirements.[Conclusion]GC/MS/MS has more precise qualitative and quantitative function,it provide a better method for the determination of trans fatty acids content.
