柠檬酸以其独特的性质在食品加工业中广泛应用,是一种用量相当大的食品添加剂。文章概述了柠檬酸的性状及其在食品工业中的主要用途。
Citric acid is widely used in food industry for its special qualities. As a food additive its consumption is very high. This paper introduce the properties and largely applications of citric acid in food industry.
