摘要
生物工程技术是当今世界令人瞩目的高新技术。本文主要介绍了生物工程技术在乳品发酵工业中的应用以及乳酸菌生物工程育种的途径 ,并涉及了发酵剂基因工程技术的发展前景。
Biotechnology is a promising high tech in the latest technology revolution. Biotechnology in the dairy starter culture industry has got great achievements in theory and technology. These key applications include bacteriophage resistance, stabilization of plasmid linked activities, flavor and texture enhancement, production of bacteriocins, production of food grade enzymes and heterologous protein and so on. Several main applications and tools for biotechnology of LAB were discussed. Development trend was also noticed.
