摘要
用扫描电镜研究12种大米淀粉颗粒的粒径,用旋转流变仪研究不同大米淀粉糊的流变学特性,并分析大米淀粉粒度分布与流变特性间的关系。结果表明,大米淀粉粒度分布符合罗森分布。大米淀粉糊呈假塑性流体的特性,黏度系数对温度有较大的依赖性。大米淀粉粒度分布与流变特性间的关系显著。
Granular diameter and rheological properties of rice starch from 12 kinds of rice were measured by scanning elec- tronic microscope and rotary rheometer, respectively. The relationship of rice starch between granularity distribution and theo- logical properties was studied by using mathematical model. Results showed that granularity distribution of rice starch meets Rosin-Rammler distribution. Rice starches paste was pseudoplastic, and the consistency coefficient depended on temperature greatly. The relationship of rice starch between granularity distribution and rheological properties was significant.
