摘要
纳他霉素是我国批准的允许在食品中使用的天然微生物防腐剂之一,具有高效、安全、无毒、无副作用等特点,用量极微即可发挥防腐作用。主要介绍了纳他霉素的结构和特性以及在不同类型食品中的应用,并对其前景进行了展望。
Natamycin was one of natural microbial preservatives allowed in food, and had the efficient, safe, non-toxic, no side effect, etc. Very little dosage can play preservative effect. The structure, characteristics and the application in different types of food of natamycin were mainly introduced, and the prospects were expected.
