摘要
测定了潮州市面销售的8种品牌火腿的亚硝酸盐含量,结果显示,所测8份样品中有4份超标,抽检合格率为50%,其中亚硝酸盐残留量最高达29.77 mg/kg,超过国家标准(GB)规定1.49倍;超标检样主要集中在小型肉制品加工厂和个体食品加工者,提示消费者在选购火腿等肉制品时应注意品牌和生产厂家。
The study determined and analyzed 8 brands of the nitrite content of ham in the market of Chaozhou. The results showed that there were 4 samples exceed the standard with the sampling qualified rate of 50%, and the residue nitrite as high as 29.77 mg/kg, 1.9 times than the national standard regulations.The samples exceed the standard mainly concentrated in the small meat processing plant and individual food processors, it sugested that prompting consumers should pay attention to brands and manufacturers on ham and other meat products.
