摘要
论述了HACCP体系在浓香型白酒生产中应用的重要作用,针对浓香型白酒生产工艺,对浓香型白酒生产过程进行了危害分析,指出了浓香型白酒生产过程的关键控制点,提出了生产过程的监控方法和纠偏措施,保证了浓香型白酒产品的安全性。
The important function of HACCP system in Luzhou-flavor liquor production application was discussed. The harm in the process of Luzhou-flavor liquor production technics was analyzed. The Critical Control Point in the course of Luzhou-flavor liquor production was pointed out. The method of monitor control and the measure of correcting an error in the course of production was put forward to ensure the safety of Luzhou-flavor liquor products.
