摘要
利用分光光度计法测定了5种蓝莓红叶花青素含量。在单因素试验的基础上,通过正交试验优化超声波辅助提取花青素的最佳提取工艺条件。试验结果表明,5种蓝莓红叶花青素含量依次为夏普兰278.2>园蓝135.5>杰兔82.6>粉蓝53.7>巴尔德温40.1mg/100g干重。以夏普兰红叶为原料,正交试验优化花青素提取条件为:乙醇浓度80%、料液比1:30、提取次数2次、提取时间40min、提取溶剂HCl含量0.3%,此条件下提取率为85.5%。研究结果有利于蓝莓资源高效利用。
The concentration of anthocyanins in the extraction of five red blueberry leaves were determined with spectrophotometer. The results indicated that highest concentration of anthocyanins was found in Sharpland as 278.2 mg/100 g dry weight, followed by Gardenblue 135.5 〉Premier 82.6〉Powderblue 53.7 mg/100 g 〉Baldwin 40.1. Based on single extracting yield, the optimal condition of supersonic wave assist extraction was also obtained. The results suggest that the maximum of extract ratio of anthocyanins from red leaves of Sharpland blueberry could reach 85.5% under the optimal condition: 80% ethanol, ratio of sample weight and solvent volume, 1:30; extraction time, 40 min; extract times, 2; concentration of HCI in extaction solvent, 0.3%.
