摘要
冷链物流是保证酸奶质量安全的重要因素,将HACCP原理应用于酸奶的冷链物流,对酸奶的冷链物流过程进行危害分析、确定关键控制点并制定相应控制限值,以提高酸奶流通领域的质量安全。
Cold chain logistics protects quality of yogurt. In this paper, the application of HACCP system in cold chain logistics of yogurt was studied. Hazard analysis was analyzed and critical control points and corresponding control values were determined, so as to improve yogurt safety in circulation field.
