摘要
探讨了膨化加工对食品微量元素含量的影响。结果表明 ,大米膨化加工对Fe、K、Co、Ge、Ni等基本无影响 ,但Mn、Mo、Cu等元素含量减少。
The trace elements in expansive rice were analysed by atomic absorption spectrometry and the content of trace elements in expansive rice was compared with rice. The results showed that the content of Mn,Mo,Cu in expansive rice decreased. The content of trace elements was affected by different processes. The average recovery of this method was 89 0%~104 6% with satisfactory result.
