摘要
目的了解部队内部食堂饮食服务行业餐饮具消毒状况,为卫生部门制订政策、采取针对性措施提供科学依据。方法本次研究采用随机抽样调查,对部队某院校内部食堂的餐饮具样品进行大肠菌群指标检测。结果不同时间采集样品消毒合格率不同;不同性质单位餐饮具检测合格率基本相同。结论部队内部食堂饮食服务行业的餐饮具消毒工作存有缺陷,需进一步加强管理,特别是夏秋季节的餐饮具消毒工作。该次研究为部队卫生部门今后对饮食服务行业进行监督管理提供了宝贵的科学依据。
Objective To understand the tablewares disinfection of army canteens, and provide basis for health departments in making policy and taking direction measures. Method Adopt the method of random sampling to select the tablewares of canteens in an army college and then detect the coliform bacteria. Results The dis- infection qualified rates were different for the samples collected in different times, but were the same for differ- ent units. Conclusions The disinfection works of army canteens existed defects, and it needed to enhance management, especially in summer and autumn. This study provided valuable scientific basis for supervisory management of catering service industry in the future.
