摘要
研究同一养殖池塘内青、红刺参(Apostichopus japonicus)体壁的营养组成与含量。结果表明:青刺参和红刺参体壁中水分含量、出皮率和干品灰分含量差异显著(P<0.05),粗蛋白、总糖分和粗脂肪含量差异不显著(P>0.05)。青、红刺参体壁均含有18种氨基酸,各种氨基酸含量无显著差异(P>0.05)。在检出的10种主要脂肪酸中,青刺参体壁中MUFA-16∶1(十六碳烯酸)和SFA-20∶0(二十碳酸)的含量显著高于红刺参(P<0.05),AA(二十碳四烯酸)的含量显著低于红刺参(P<0.05)。青、红刺参体壁均含有VB1、VB2、VB3、VB9、VB12、VC和VE等7种维生素,红刺参的VB3含量显著高于青刺参(P<0.05)。红刺参类胡萝卜素总量显著高于青刺参(P<0.05)。在检测的微量元素中,红刺参Zn、Cu和Se含量均显著高于青刺参(P<0.05)。研究表明,红刺参的综合营养品质优于青刺参。
Body wall nutrient composition of green and red sea cucumbers cultured in a pond was compared in this study. We found that the moisture, body wall production rate and ash (dry weight) contents were significantly different between green and red sea cucumbers (P〈0. 05) ; while crude protein, crude fat and carbohydrate contents were similar each other (P 〉 0.05). The content of 18 amino acids identified in their body wall were similar (P〉0.05). Among 10 major fat acids, MUFA-16: 1 and SFA-20.0 of red sea cucumber were significantly higher in content than green sea cuccumber (P〈0.05) ; while AA of red sea cucumber was significantly lower in content than green sea cuccumber (P〈0. 05). Seven vitamins, VB1, VB2, VB3, VB9, VB12, VC and VE, were found in their body wall, of these vitamins, VB3 of red sea cucumber was significantly higher than green sea cucumber in cntent (P〈0. 05). Total carotenoid content of red sea cucumber was significantly higher than that of green sea cucumber (P〈0. 05). Of the trace elements, Zn, Cu and Se contents in body wall of red sea cucumber were significantly higher than those of green sea cucumber (P〈0.05). These findings indicated that the integrating quality of red sea cucumber is higher than that of green sea cucumber.
