Surveillance and Analysis of Salmonella in Food Samples in Guangxi During the Period of 2010-2011

摘要 目的了解广西食品中沙门菌污染的现况,为食源性沙门菌污染的预防及控制提供依据。方法 2010-2011年从广西8个地级市的餐饮企业、集贸市场、卖场超市和街头摊贩采集各类食品样品,按照国标方法进行沙门菌检验。结果共检测3 108份食品样品,总检出率2.57%。检测的16类食品中,6类食品受到沙门菌不同程度的污染,生肉类检出率最高达22.59%(χ2=141.7,P<0.001);桂东部检出率最高达4.26%(χ2=17.964,P<0.05);集贸市场检出率最高达5.47%(χ2=55.493,P<0.001);散装食品检出率3.38%;病原学鉴定分属7个血清群或亚群、23个血清型。结论广西多种食品受到沙门菌不同程度污染,以生肉类污染最严重,且呈血清型多态性,应加强对生肉类屠宰、加工、运输、储存和销售各个环节的监测和管理。 Objective To investigate the contamination of Salmonella in food in Guangxi,and to offer evidence for prevention and control of foodborne salmonellosis.Methods Different kinds of food samples were collected from catering industry,fairs,supermarkets and street vendors of eight cities of Guangxi from 2010 to 2011.The samples were detected by the national standard method.Results A total of 3,108 food samples were determined,with the detection rate of 2.57%.6 out of 16 kinds of the tested food were contaminated with Salmonella to varying degrees.The contamination of raw meat was the most serious,with the detection rate of 22.59%(χ2=141.7,P0.001).The detection rate in eastern Guangxi was the highest(4.26%),(χ2=17.964,P0.05).The detection rate of fairs was the highest(5.47%),(χ2=55.493,P0.001).The detection rate of unpacked food was 3.38%.Salmonella isolates were identified and typed to 7 serum groups or serum subsets and 23 serum types.Conclusions Various foods in Guangxi were contaminated with Salmonella to varying degrees.The contamination of raw meat was the most serious and it showed various serum types.It is necessary to enhance monitoring and management in slaughter,processing,transportation,storage and selling of raw meat.
