摘要 浓香型白酒酿造生产中采用的老窖池,是中国独有的传统酿酒设备,是经长期自然优化、积累的,富含风味物质、微生物、生物酶的生物发酵设备宝库。这类窖池分布广,如宜宾、泸州、绵竹等地都有,但宜宾五粮液最为典型、数量最多、历史最长。介绍了五粮液依托着独特的自然环境资源和长期传承的酿酒传统工艺资源,才具备了不可复制和替代的老窖池生态环境;并通过介绍五粮液老窖泥的感官特征和主要物化成分特征、生物特征,为老窖泥的保护性开发利用提供了参考。 Old pit pool used in the production of Luzhou-flavor liquor brewing, is the unique traditional brewing e- quipment in China which approved by the long-term natural optimization, and it is the fermentation equipment trea- sure riched in favor substances, microorganisms, biological enzymes. This kind of pit pool was widely distributed, such as Yibin, Luzhou, Mianzhu, ere, but Yibin Wuliangye is the most typical one, which has the largest num- berand the longest history. This paper introduced the Wuliangye which has the duplicated and irreplaceable old pit pool ecological environment was based on a unique natural environment resources and long-term inheritance liquor brewing traditional technology resources; provided a reference for the protective development and utilization of the old pit mud,through the introduction of the sensory characteristics, the main chemical composition characteristics, biological characteristics of Wuliangye old pit mud.
