摘要 采用雅致放射毛霉3.2778发酵大豆分离蛋白,研究其发酵液中的大豆多肽含量变化,运用响应面分析法(re-sponse surface methodology,简称RSM)优化影响发酵的主要因素:接种量、pH、底物浓度,采用多元二次回归方程拟合和上述3因素与大豆多肽含量间的函数关系,确定了毛霉发酵大豆蛋白产大豆多肽的最佳发酵条件,为毛霉发酵大豆蛋白产大豆多肽的研究提供了相应的工艺参数和一定的理论依据,有利于提高大豆多肽的产率。 The ability of Actinomucor elegans 3.2778 for the production of soybean peptides on soybean protein isolated (SPI) was studied. By response surface methodology, the main fermentation factors were optimized, includ- ing inoculums, initial pH and the concentration of fermentation medium, using muhiquadratic regression equation to fit the functional relationships between three above factors and the content of soybean peptide, the optimal fermen- tation conditions for the production of soybean peptides by AS3.2778 on SPI were determined. The results could be used as technical parameters and theoretic basis for the production of soybean peptides with AS3.2778 on SPI, which were helpful for increasing the production rate of soybean peptides.
