摘要
油脂色泽是消费者对油脂产品最直接的感官评定。本文针对油脂回色现象进行研究,影响油脂回色的因素很多,含磷量是主要因素之一。本文主要研究大豆油中的含磷量多少与大豆油回色的关系,得出结论:含磷量高的大豆油更容易回色,也更越容易氧化。
Oil color is the most direct sensory evaluation for a consumer to select the oil prod- ucts. In this paper, the oil color reversion was studied. There are many factors affecting oil color reversion, phosphorus content is one of the main factors. In this paper, the relationship between phosphorus content and soybean oil color reversion was analyzed. Results show that the high phosphorus content of soybean oil is easier to back color and easily oxidized.
