摘要
以优质人工窖泥建造不同壁厚的窖池,通过对窖池发酵过程中窖泥主要功能菌及其代谢产物的分析研究,揭示不同建窖厚度窖泥功能菌的分布规律和代谢特征。为科学建造浓香型白酒窖池提供理论指导,推动窖泥生产技术不断完善。
Build Cellar pool with different wall thickness was built by high quality artificial pit mud. Distribution of mud functional bacteria and metabolic features in different thickness pit was revealed through research on main functional bacteria and its metabolic product in pit mud fermenta- tion process. The results provide theoretical guidance for scientific construction of luzhou-flavor liquor cellar pool, and promote the pit mud produc- tion technology to be improved constantly.
