摘要 低聚半乳糖是功能性低聚糖的一种,在母乳低聚糖中低聚半乳糖含量是非常丰富的,所以低聚半乳糖被认为是各种低聚糖中益生功能比较好的益生因子。根据国内外近二十几年的研究资料,在介绍了低聚半乳糖的生产、结构、理化性质的基础上,着重阐述了低聚半乳糖的生理功能,指出低聚半乳糖在食品工业中应用的潜力。 Galactooligosaccharides (GOS) is a functional oligosaccharides. GOS in oligosaccharides of human milk is very rich, so GOS is regarded as the well prebiotics in all oligosaccharides. Base on the researches on GOS in recent decades, this article focuses on physiological funetions of GOS after detailing its production, structure, physicochemical properties. Applying potential of GOS in food industry was pointed out.
