大孔树脂D201分离纯化美拉德体系中丙烯酰胺的研究

摘要 食品中存在的酚类物质会干扰HPLC法对丙烯酰胺的检测。通过7种树脂对绿原酸和丙烯酰胺标准溶液的静态吸附研究,发现D201能近乎完全吸附加入的绿原酸,而对丙烯酰胺的吸附率不足50%。将D201预处理加入了绿原酸反应后的美拉德体系样品溶液,用HPLC法检测,发现丙烯酰胺能完全与杂质分离;同时考察了D201树脂和HPLC联用法的精密度和准确度,发现该方法的变异系数为1.956%,平均回收率为53.8%。 Phenolic compounds in food interfere analysis of acrylamide.In this research,seven resins were used to adsorb chlorogenic acid and acrylamide.It was found that D201 could completely absorb the added chlorogenic acid and less absorb acrylamide.When a Maillard reaction mixtures(asparagine+glucose+chlorogenic acid) were passed through D201 resin,it was shown that acrylamide could be well separated from impurities on HPLC chrotomagraph;and the results showed that the relative standard deviation was 1.956% and the average recovery was 53.8% for acrylamide.
