摘要 高原地方优良小型合作猪又叫蕨麻猪,在改变了传统的放牧到圈养的过程中肉品质更得到了关注,本文对不同饲养方式下合作猪的生长发育特性、屠宰性能和肉品质变化进行对比分析。结果表明,1~6月龄舍饲型合作猪生长发育较快,与放牧型合作猪比较,体重、体高、体长、胸围差异极显著(p<0.01);两种合作猪肉的肉色、大理石纹、pH1h、pH24h、失水率、系水力和风味物质含量二者无显著差异,舍饲合作猪肉的干物质、蛋白质含量显著高于放牧组(p﹤0.05);表明合作猪舍饲圈养方式对肉品质无显著影响,对合作猪进行舍饲圈养是可行的。 Plateau miniature Hezuo pig, also know as Juema pig, its meat quality is focus due to the change of rearing way from grazing to barn feeding. In this paper, growth performance, slaughter trait and meat quality were analyzed in different rearing ways. The results demonstrated that the pigs of 1 - 6 month old barn feeding grew faster than grazing pigs in body weight, height, length and chest circumference (p〈0.01). There were no significant difference between the two rearing ways in meat color, marbling, pH 1 h, pH 24 h, water loss rate, water holding rate and flavor substance. Dry matter and protein content of barn feeding pigs were significantly higher than grazing pigs (p〈0.05). Therefore, barn feeding way does not affect meat quality, which is feasible for Hezuo swine.
