低温胁迫下黄瓜果实膜透性和保护酶活性的变化 被引量:9

摘要 为了研究黄瓜果实在低温贮藏过程中生化指标的变化,选用瑞青黄瓜在1、8、10和12℃下贮藏12 d,研究超氧化物歧化酶(SOD)、过氧化氢酶(CAT)、过氧化物酶(POD)活性、丙二醛(MDA)含量和膜透性在低温胁迫过程中的变化。结果表明:低温胁迫期间,较低的温度对黄瓜造成严重冷害,POD、CAT和SOD活性明显受到抑制,导致MDA含量增大、膜透性迅速升高。10℃和12℃下贮藏的黄瓜受到低温胁迫的影响远低于1℃、也较低于8℃,8℃可以作为瑞青黄瓜的冷害临界温度。 In order to study the biochemical indicators of cucumber fruits in the low temperature storage process, Ruiqing cucumbers were stored at1℃,8℃,10℃ and 12℃ for 12 days separately. They were used to study the changes of SOD, CAT and POD activities, MDA content and membrane permeability during low temperature stress. The results showed that chilling injury of cucumbers was more serious with lower temperature during low temperature stress. POD, CAT and SOD activities were restrained obviously led to the MDA content and membrane permeability increased. The low temperature stress had a much less influence on the cucumbers which stored at 10℃ and 12℃ than at 1℃ and less than at 8℃. 8℃ could be the critical temperature when chilling injury of Ruiqing cucumber was appeared.
