摘要
取淮北平原麦区小麦品种样品17份,对小麦及其小麦粉矿质元素Ca、P、Fe、Cu、Mn、Mg、Zn含量进行测定。结果表明:本麦区小麦矿质元素含量水平与世界六个国家地区的小麦矿质含量基本相近;矿质元素含量不受小麦质地软硬影响;本麦区小麦粉矿质营养素与人类膳食的要求相比,Cu、Fe基本满足,Zn、Mn、Mg需要进一步补充,Ca、P则需要大量强化。
Seventeen samples of wheat varieties were collected from the NorthernHuaihe wheat region and tested for contents of Ca, P, Fe, Cu, Mn, Mgand Zn in wheat grain and flour. The results suggest that the above-mentionedcontents of chinese wheat region are essentially similar to the contents ofwheat regions of six countries in the world. The contents of mineralelements in wheat are not affected by its softness and hardness. Nutritivemineral elements in wheat of above-mentioned region can essentially meetthe needs of human, included Cu and Fe, but Zn, Mn and Mg, especiallyCa and P, are to be further complemented.
