摘要
试验利用紫外线诱变技术,通过发酵豆粕选育高蛋白酶解及抗营养因子降解菌株,并对其进行微生物学鉴定。结果表明,与出发菌株JY相比,突变株JY15的蛋白酶解能力和抗营养因子降解能力均有极显著的增加(P<0.01),蛋白酶活力提高了170.6%,酸溶蛋白含量提高了151.3%,游离氨基酸含量提高了49.8%,胰蛋白酶抑制因子含量降低了73.7%,植酸含量降低了80.2%。微生物学鉴定该菌株为芽孢杆菌属。
The aim of this research was to screen a strain by ultraviolet mutagenesis.Soybean meal fermented with the strain could improve the small molecular protein content and reducing the effect of the anti-nutritional factors.The results indicated that:compared with the original strain JY,the protease activity and anti-nutritional factors degradation ability of the strain JY 15 a significantly increased (P 〈 0.01);protease activity,the content of the acid-soluble protein and free amino acids increased by 170.6 %, 151.3 % and 49.8 % ,respectively,the elimination of trypsin inhibitor and phytic aic were decreased by 73.7 %and 80.2 %.The strain identified as Bacillus sp.
