摘要
为了解河北省肉食品大肠杆菌污染状况,从河北省内不同地区集贸市场和超市随机采集了生活用肉、蛋类等105个样品,采用国家标准法和PCR方法对样品进行了大肠杆菌的检测与鉴定。结果表明,从105个样品中检测到大肠杆菌19株,大肠杆菌总阳性率18.1%。其中,生鸡肉、生猪肉、生鸡蛋的大肠杆菌阳性率分别为35.3%,23.8%,16.7%;生羊肉、生牛肉、生鸭蛋、生虾没有检出大肠杆菌。19株大肠杆菌中从生鸡肉样品中检出产志贺样毒素大肠杆菌2株。河北省肉类食品总体上大肠杆菌污染程度较轻,但生鸡肉中大肠杆菌的检出率较高。
This study was conducted in order to investigate the pathogenic E. coli contamination of food in He- bei province and provide the basis to ensure food safety. A total of 105 samples of raw meat and eggs were col- lected in the supermarkets from 2009 to 2010, and were examined for the presence of E. coli by national stand- ard method'and PCR. The result showed that nineteen ( 18.1% )of samples were positive for E. coli, in which the positive rates of raw chicken meat, raw pork, and raw eggs were 35.3 %, 23.8%, !6.7%, respectively, and no E. coli was found from raw mutton, raw beef, raw duck' s eggs and raw shrimp. In addition, two Shiga Toxin-producing Escherichia coli were isolated from raw chicken. The contamination of E. coli in meat is not serious in Hebei province, but the positive rate of raw chicken meat was higher than other kinds of samples. Thus more attentions should be paid to monitor them, especially in summer, to prevent occurrence of food con- tamination.
