摘要
采用酸水解法,研究在不同温度、水解时间等反应条件下麦芽糊精水解后还原糖的含量,确定含麦芽糊精的麦片的碳水化合物的快速检测方法。研究表明,水解温度为85℃,水解时间为15 min时,通过测定水解后还原糖含量,同时测定总糖含量,可快速计算出添加到麦片中的麦芽糊精的含量,进而推算出碳水化合物的含量。
Using acid hydrolysis method, research maltodextrin hydrolysis reaction conditions of temperature and hydrolysis time affect the reducing sugar content, and determine the rapid detection method of carbohydrate in oatmeal with maltodextrin, research shows, hydrolysis temperature was 85 ℃, reaction time was 15 minutes, determination of reducing sugar content and total sugar content, can calculate the malt dextrin content that added to the oatmeal, then further calculate the content of carbohydrate.
