几种不同风味牛奶中钙镁锌元素的含量测定 被引量:3

摘要 通过用微波消解法处理牛奶样品,用火焰原子吸收光谱法测定牛奶中钙、镁、锌元素的含量,为人们根据需求选用牛奶提供依据,同时为营养师的营养配餐提供参考。经测定,在所检样品中:高钙牛奶和加钙牛奶中钙的含量最高,分别为166.8 mg/100 mL和132.9 mg/100 mL;特品牛奶中钙含量较高,为110.4 mg/100 mL;巧克力牛奶中含钙量较低,为87.8 mg/100 mL;其他风味牛奶的含钙量为100 mg/100 mL。盒装巧克力奶与盒装特品纯牛奶中镁的含量较高,分别为13.71 mg/100 mL和12.25 mg/100 mL;红枣酸奶和酸牛奶中含镁量较低,均约为9.30 mg/100mL;其他风味牛奶含镁量约为11.20~11.3 mg/100 mL。盒装高钙奶中锌的含量最高,为0.64mg/100 mL;酸牛奶和红枣酸奶中锌的含量较低,分别为0.36 mg/100 mL和0.38 mg/100 mL;其他风味牛奶的含锌量约为0.43 mg/100 mL。不同风味牛奶中钙、镁、锌元素的含量不完全一致。 Milk samples are treated by microwave-digestion and elements of Ca, Mg and Zn in milk are determined by flame atomic absorption spectrometry. A nutritious reference can be provided for people to select the milk they need and fgr nutritionists to prepare nutritional diet. In the tested samples, the highest content of Ca is So3 and S08, 166.8 mg/100 mL and 132.9 mg/100 mL respectively; the next is S07 for 110.4 mg/100 mL; S03 got the lowest by 87.8 mg/100 mL; the others are about 100 rag/100 mL. The highest content of Mg is So3 and So, 13.71 mg/100 mL and 12.25 mg/100 mL respectively; So9 and S10stay the second by about 9.30 mg/100 mL; the others are about 11.20 mg/ 100mL 11.3 rag/100 mL. The highest content of Zn is So4, 0.64 mg/ 100 mL; the next are S09 and S10,0.36 mg/100 mL and 0.38 mg/100 mL respectively; the others are about 0.43 rag/100 mL. The content of Ca,Mg,Zn in different flavored milk is not exactly the same.
