摘要
目的:了解江苏省南通市2011年流通领域食品中食源性致病菌、重金属、食品添加剂、农药兽药含量等情况。方法:采集水产品、食用植物油等60类流通领域食品,样品送南通市食品安全检测中心,按国标方法进行理化指标、微生物指标、食品添加剂以及农药兽药残留的检测。结果:监测2 176份食品样品,合格样品2 053份,总体合格率为94.3%,其中非发酵性豆制品合格率最低,为32.6%;菌落总数超标检出率为2.99%、无机砷超标检出率为1.18%、甜味剂超标检出率6.67%、三唑磷检出率为4.5%、孔雀石绿检出率为0.13%。结论:南通市流通领域食品中存在的主要安全风险因子为食品添加剂超标、农药残留超标、菌落总数超标、大肠菌群超标等;高风险食品主要为非发酵性豆制品、熟肉制品等;农贸市场和批发市场的监测合格率低于商场超市;散装食品监测合格率低于定型包装食品。通过食品安全风险监测,为建立预警机制、部署监管工作、构筑长效监管提供了基础数据和决策依据。
[Objective] To understand food-borne pathogens, heavy metal, food additives, pesticide and veterinary drug content etc in the circulation field of Nantong city in 2011. [Method] To collect samples of aquatic products, edible vegetable oil and other 60 kinds of food of circulation field, and send sample to Nantong City Food Safety Inspection Center. Detect physical and chemical indicators, microbial indicators, food additives, and pesticides and veterinary drug residues according to the national standard methods. [Result] Among 2 176 food samples, 2 053 samples were qualified, the overall pass rate was 94. 3% , in which the non fermented soybean product qualified rate was minimum, which was 32. 6%. The total number of colonies exceed the standard rate were 2. 99% , inorganic arsenic exceed the stand- ard rate were 1.18% , sweeteners exceed the standard rate were 6. 67% , three triazole phosphorus exceed the standard rate was 4. 5% , and the detection rate was 0. 13% of malachite green. [Conclusion] The main risk factor existed in circulation of food in Nantong city were h,od additives, exceed the standard of pesticide residues, exceed the standard of aerobic bacterial count, and coliform group exceed the stand- ard. High risk food mainly included non-fermented bean products, cooked meat products such as ready-to-eat food. Qualification rate of farmers market and wholesale market monitoring was lower than bulk food supermarket shopping malls. The qualified rate of bulk food was lower than the stereotypes food packaging. The monitoring of food safety risks provided basic data and basis for decision making for the establishment of early warning mechanism, the deployment of supervision work, and a long-term supervision building.
