摘要 以新鲜玫瑰浸提汁和火龙果果汁为原料,研制具有美颜功效的新型玫瑰火龙果复合饮料。通过单因素试验和正交试验得到优化配方为:玫瑰汁为12%,火龙果汁为25%,加糖量为8%,柠檬酸添加量为0.15%,采用复合稳定剂CMC-Na与黄原胶(1:1),用量为0.2%;最佳杀菌条件为85℃,杀菌20min。 The manufacture of compound beverage with the etticacy of a new type of beauty product, rose extrac- tion and dragon juice as raw material, was studied in this dissertation. The optimal processing conditions and recipe were determined by simple factors test and orthogonal test. The results showed that: the rose juice was 12%, the pro- cession of lanterns fruit juice was 25%, sweetens the quantity was 8%, the citric acid recruitment was 0.15%, best stabilizers for CMC- Na and xanthan gum(1:1) by 0.2%, the best sterilization condition was in 85%, 20min.
