摘要
[目的]探索苜蓿叶蛋白的最佳提取条件。[方法]设置了不同料水比、加热温度、絮凝时间、pH,研究其对苜蓿叶蛋白提取的影响。[结果]当料水比为1∶4,加热温度为70℃,絮凝时间为9 min,pH为5.0时,苜蓿叶蛋白得率和粗蛋白提取率均最高。[结论]该研究可为叶蛋白的开发与利用提供理论依据。
[Objective] The research aimed to explore the optimum extraction conditions of leaf protein from alfalfa.[Method] Different material-water ratio,hearing temperature,flocculation time and pH were set up to study their effects on the extraction of leaf protein.[Result] When the material-water ratio was 1∶4,heating temperature was 70 ℃,flocculation time was 9 min and pH was 5.0,the yield of alfalfa leaf protein and the extraction rate of crude protein were both the highest.[Conclusion] The research could provide theoretical basis for the development and utilization of leaf protein.
