摘要
利用傅里叶变换红外光谱仪,采用加热顶空法鉴别地沟油。实验结果表明,地沟油在波数2 880、2 940、2 966 cm-1处有区别于食用植物油的特征吸收峰。对于掺有地沟油的调和油,该方法可以检测到体积分数为5%的样品。由图谱检索与GC-MS分析,地沟油加热顶空条件下所测特征峰,是由饱和烷烃等物质产生的。该方法可用于地沟油的定性检测。
Swill- cooked dirty oil was discerned by FFIR with heating headspace method. The results showed that swill - cooked dirty oil had characteristic absorption peaks at the wave number of 2 880, 2 940,2 966 cm-1 ,which were different from edible vegetable oil. 5% volume fraction of swill -cooked dirty oil in cooking oil could be detected by the method. By GC -MS analysis and matching with Nist li- brary, the characteristic peaks of swill - cooked dirty oil discerned by FTIR with heating headspace were generated by saturated alkanes etc. This method could be used for the qualitative detection of swill - cooked dirty oil.
