摘要
目的建立检测熟肉制品中4种人工合成色素的高效液相色谱法。方法以VARIAN ODS(250 mm×4.6 mm,5μm)为色谱柱,甲醇∶乙酸铵(0.02 nmol/L)为流动相,经梯度洗脱分离。流速1.0 ml/min,检测波长为428~527 nm,柱温为40℃,紫外检测器检测。结果 4种人工合成色素浓度在0.1~5μg/mL范围内呈良好的线性关系,回归系数均大于0.999,相对标准偏差(RSD)=1.2%~3.4%,平均回收率为84.5%~90.1%。最低检出限分别为柠檬黄0.3 mg/kg,胭脂红0.3 mg/kg,日落黄0.15 mg/kg,诱惑红0.15 mg/kg。结论实验结果表明该方法灵敏度高,精密度和准确度好,能满足测定要求。
[Objective]To establish a method for determination of four artificial pigments in cooked meat products by HPLC.[Methods]VARIAN ODS(250 mm×4.6 mm,5 μm) was used as the chromatographic column,and the mobile phase was methanol : ammonium acetate(0.02 nmol/L) with gradient elution.The flow rate was 1.0 ml/min,the detection wavelength was at 428-527 nm,and the column temperature was 40 ℃.UV detector was applied for detection.[Results]The linearity range of four artificial pigments was 0.1-5 μg/ml,all correlation coefficients were high than 0.999,the relative standard deviation(RSD) was 1.2%-3.4%,and the average recovery was 84.5%-90.1%.The lowest detection limit of tartrazine,carmine,sunset yellow and fancy red was 0.3 mg/kg,0.3 mg/kg,0.15 mg/kg and 0.15 mg/kg,respectively.[Conclusion]This method has good sensitivity,precision and accuracy,which can meet the requirement of determination.
