啤酒生产中的嘌呤类物质与低嘌呤啤酒的研究进展

低嘌呤啤酒，指总嘌呤含量低于传统啤酒的一类产品，主要以患有痛风或高尿酸血症的消费者为市场对象。本文对嘌呤类物质在啤酒生产中的来源及代谢过程、嘌呤类物质含’疑的降低措施等方面进行阐述和讨论，为低嘌呤啤酒的研发开发和产品完善提供思路。

Low-purine beer, in which the totally purines content is generally lower than that in traditional beer, has been developed for consumers suffering from gout and hyperuricemia,Purines＇ sources, its changes in processing and approaches to decrease purines content in beer have been discussed in this paper, aiming at offering some ideas for improvment and optimization of Low-purine beer quality
